GENERAL JOB DESCRIPTION
The Sous Chef will report to the Executive Chef and be responsible for the following:
Assist with menu planning, inventory, and managing of supplies
Ensure the kitchen is up to safety standards and that staff are obeying sanitation rules.

Display excellent judgement and problem-solving skills during mealtimes

MAJOR DUTIES AND RESPONSIBILITIES
In conjunction with executive chef assist with the proper set-up and presentation of all food and buffets throughout shift.
Responsible for overseeing and preparation of all foods during the shift, in accordance with guidelines and standardized recipes
Assist with and oversee the training of kitchen staff to ensure quality food preparation and adherence to sanitation and safe food handling standards.
Responsible for inspection of all food to ensure its consistency.
Assume responsibility for appropriate kitchen business in absence of Executive Chef
Follows and upholds all health codes and sanitation regulations.
Sets up and operates kitchen equipment.
Uses waste control guidelines and records all waste on spoilage sheet.
Ability to work varied hours/days, including nights, weekends, and holidays, as needed.
Performs other duties assigned

MINOR DUTIES AND RESPONSIBILITIES

Ability to maintain a calm, composed presence in an often fast-paced environment where multiple tasks, events and stimulus may occur simultaneously.
Ability to define problems, collect data, establish facts, and draw valid conclusions. Able to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.


QUALIFICATIONS FOR THE JOB

Education and experience:
High School Diploma or General Education Degree required and a minimum of three years culinary and management experience; or an equivalent combination of education and experience.

Other:
Private Club experience


KEY COMPETENCIES

Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals.
